Hot, hearty and creamy, this warming caulflower and broccoli gratin is beautiful served straight from the pan on a cool evening. Perfect as a decadent side dish or hearty family meal.

Method
1.Preheat oven to moderate, 180°C. Lightly grease a 20 x 30cm casserole dish.
2.Place the cauliflower and broccoli into a large saucepan. Cover with water. Bring to the boil over a high heat.
3.Reduce heat to low and simmer, covered, for 6-8 minutes until vegetables are tender. Drain well and arrange in prepared dish.
4.Meanwhile, make sauce: Melt butter in a saucepan over a medium heat. Blend in flour and cook, stirring with a wooden spoon, for 1 minute – make sure the mixture does not brown.
5.Remove from the heat and gradually blend in milk until smooth. Return to heat. Cook over a high heat, stirring constantly, until sauce boils and thickens. Reduce heat to low and simmer for 3 minutes. Season to taste.
6.Pour sauce over vegetables. Sprinkle with combined cheeses and breadcrumbs.
7.Bake for 25-30 minutes until bubbling and golden.
