Method
1.Heat oil in medium saucepan, cook onion, capsicum and garlic, stirring, until onion is soft.
2.Process breadcrumbs, beans, egg, parsley, rind, half of the cheese and onion mixture until just combined, stir in nuts.
3.Shape â…“-cup measures of the mixture into patties. Place patties on oiled baking tray, sprinkle with remaining cheese.
4.Bake in hot oven about 20 minutes, turning halfway during cooking, or until browned lightly.
5.To make herb yogurt. Combine ingredients in small bowl.
6.Serve patties with lemon and herb yogurt and steamed asparagus and rocket leaves, if desired.
