Skewers are a family favourite, low-fuss meal and this recipe makes an exciting weeknight dinner on the grill or barbecue. Juicy and tender pork fillets are coated with a vibrant homemade satay sauce and grilled until golden brown. And by using simple shortcuts to save you time – quick-cook buk choy and jazzed-up microwave rice – dinner’s on the table in just half an hour.

Ingredients

SATAY SAUCE

Method

1.

Make satay sauce. Reserve 1 cup of the sauce.

2.

Thread pork onto eight 23cm metal skewers, coat with remaining satay sauce.

3.

Cook skewers on a heated oiled grill plate (or grill or barbecue), over medium-high heat, about 10 minutes or until cooked through.

Meanwhile, boil, steam or microwave buk choy until tender; drain.

5.

Microwave rice according to directions on packet. Stir in coconut and onions; season to taste.

6.

Serve skewers with buk choy and coconut rice, top with coriander and accompany with reserved sauce for dipping and lime wedges.

SATAY SAUCE

Stir ingredients in a medium bowl until combined.

If using bamboo skewers, wrap the ends in foil to prevent them from burning.
