Method

1.Bring the water and half the oil to the boil in medium saucepan, add chicken, simmer gently, covered, about 10 minutes or until just cooked through. Cool chicken in liquid 10 minutes, then shred chicken. Discard cooking liquid.
2.Meanwhile, toast seeds in small dry frying pan over medium heat until browned lightly, remove from pan.
3.Cook noodles and snow peas in large saucepan of boiling water until just tender, drain. Rinse under cold water, drain. Slice snow peas thinly.
4.Combine tahini, vinegar, sauce, sugar, mirin and remaining sesame oil in medium bowl. Add noodles, snow peas and chicken, toss to coat. Sprinkle salad with sesame seeds to serve.

Soba are fresh or dried Japanese noodles made from buckwheat and wheat flour. They’re available from Asian food stores and major supermarkets.
