Method
1.Rinse the peppers under cold water; pat dry with paper towel.
2.Heat the oil in a large frying pan or wok over a high heat. When the oil is beginning to shimmer on the surface, add the peppers; toss for a few minutes or until slightly charred.
3.Transfer peppers to a plate and sprinkle with sea salt flakes. Serve immediately.
Padron peppers are small fresh chillies that are mild, though some can be a little hot. They are available from some greengrocers. If unavailable, you can use banana chillies or mini capsicums. Not suitable to freeze or microwave.
