1.Combine couscous with the water in medium heatproof bowl, cover, stand about 5 minutes or until water is absorbed, fluffing with fork occasionally.
2.Meanwhile, coarsely grate rind from both oranges. Segment oranges over small bowl, reserve any juice in bowl (you need ¼ cup juice).
3.Stir orange segments, reserved juice and remaining ingredients into couscous.
