Method
1.Heat oil in medium saucepan, cook onion, garlic and chilli, stirring, until onion softens.
2.Add remaining ingredients, bring mixture to a boil then reduce heat. Simmer, uncovered, 5 minutes. Cool to room temperature.
3.Blend or process until mixture forms a slightly chunky sauce.
Makes enough to accompany 500g of grilled or roasted mixed vegetables, also goes well with grilled chicken tenderloins,fish or beef skewers, roasted eggplant; stirred into a filling for fresh spring rolls. Stir ¼ cup hot water into sauce to thin it, if desired.
