1.Combine tamarind and the water in medium heatproof bowl. Cover, stand 30 minutes. Strain tamarind over small bowl, pressing to extract all liquid, discard tamarind.
2.Heat oil in medium heavy-base saucepan, cook seeds, stirring, until they pop. Stir in dates, tamarind liquid and vinegar, bring to a boil. Simmer, uncovered, stirring occasionally, about 5 minutes or until mixture is almost dry. Blend or process mixture until almost smooth.
3.Spoon hot relish into hot sterilised jars, seal while hot.
