1.Bring the water to a boil in saucepan, add couscous, cover, stand 5 minutes or until water is completely absorbed.
2.Combine beef with ginger, garlic, cardamom, cumin and paste in bowl. Heat oil in large saucepan, cook beef mixture, in batches, until tender. Remove from pan.
3.Add onion to same pan, cook, stirring, until soft. Return beef to pan with couscous, tomato, yogurt, crumbled stock cube and extra water, stir over heat until hot.
