Method
1.Make garlic mayonnaise. Combine ingredients, mayonaise, garlic, paprika and lemon juice in small bowl.
2.Cook chorizo in heated medium frying pan until browned and crisp, drain on absorbent paper.
3.Cook chicken in same pan until browned and cooked through. Remove from pan, cover, stand 5 minutes then slice thinly.
4.Meanwhile, combine olives, capsicum, onion, parsley, nuts and chorizo in large bowl, season to taste.
5.Divide salad among serving plates, top with sliced chicken and garlic mayonnaise.
The garlic mayonnaise can be thinned with a little boiling water, if you prefer.
