1.Preheat oven to 240°C. Oil oven tray.
2.Cut potatoes into wedges; combine in large microwave-safe bowl with sumac and oil.
3.Cook, covered, in microwave, on high (100%), 5 minutes.
4.Place wedges, in single layer, on tray. Roast about 20 minutes or until wedges are crisp.
.Sumac is a purple-red, astringent spice ground from berries growing on shrubs that flourish wild around the Mediterranean. It adds a delightful tart, lemony piquancy to food without the heat of chilli. Available from the spice aisle of most supermarkets and Middle Eastern stores.
