Stuffed dates with peanut butter & chocolate

“Sweet Medjool dates meet crunchy peanut butter encased in rich dark chocolate in this irresistible no-bake treat. Stuffed dates are a bite-sized sweet treat that you can feel good knowing there are no refined sugars and is naturally gluten-free.”

Method

Use a small sharp knife to cut a slit in each date. Remove and discard seeds.

Place peanut butter in a sealable bag (or piping bag) and snip 1cm from a corner. Fill each date with a little of the peanut butter (alternatively use a teaspoon to fill the dates). Press the sides of the stuffed date together to enclose the peanut butter.

In a large microwave safe bowl, melt 2/3 of the chocolate on 50% power at 30 second intervals, stirring, until the chocolate is smooth. Add the remaining 1/3 of the chocolate and stir until completely melted and smooth.

Using a forks, dip each stuffed date, one at a time, into the melted chocolate to coat, allowing excess to drip back into the bowl. Place onto a sheet of baking paper. While chocolate is still wet, decorate with salt flakes, pistachios or rose petals.

5.

Refrigerate until set. Place stfuffed dates in mini paper patty cases and store in an airtight container in the refrigerator until ready to serve.

With just four simple ingredients, these chocolate and peanut butter stuffed dates come together effortlessly and store beautifully in the fridge.

We used couverture chocolate callets for our stuffed dates, which is a high-quality chocolate used by professional chocolatiers and pastry chefs. It contains extra cocoa butter which gives a smoother texture and glossy appearance and better melting properties than regular chocolate.

If you are using block chocolate for this stuffed dates recipe, chop it finely before melting.
