Method
1.Place lime leaves and ginger in a small saucepan with water and palm sugar. Stir over medium heat until sugar dissolves; bring to the boil. Reduce heat; simmer, uncovered, until reduced to 1½ cups.
2.Strain syrup into medium heatproof jug; discard solids. Cool and refrigerate until cold. Divide lychees, lime, rum, lime juice and syrup into eight glasses. Gently crush and mix with muddling stick (or the handle of a thick wooden spoon or a pestle). Top with ice and chilled soda water.
