1.Preheat oven to 200°C/180°C fan.
2.Rub â…“ cup piri piri marinade over both sides of chicken. Heat oil in a large flameproof roasting pan over medium-high heat. Cook chicken, skin-side down, for 5 minutes. Turn chicken over. Transfer pan to oven; roast chicken for 15 minutes or until juices run clear when the thickest part of a thigh is pierced.
3.Place chicken on a platter. Serve with remaining piri piri marinade, and roasted potatoes and green salad, if you like.
