To make the marinade, combine the honey, soy sauce and the grated ginger in a large bowl. Add the chicken and toss to coat, then cover and refrigerate until ready to cook.
Place a wok or large frying pan over high heat. Add 1 tablespoon of the oil and cook the chicken, in batches, until browned and cooked through. Transfer to a bowl and set aside.
Add the remaining oil to the wok and cook the snow peas and zucchini for 2-3 minutes or until tender. Add the extra ginger and continue to cook for 1-2 minutes. Return the chicken to the wok and toss to combine.
