Mug cake is a special single serve sweet treat, cooked in the microwave and ready in an ad break. We’ve given this mug cake recipe a Women’s Weekly Test Kitchen glow-up with the flavours of zesty orange and poppy seeds. Served with a dollop of marmalade and tangy yoghurt, it’s the perfect dessert indulgence for cosy nights in.

Method
Using a fork, combine milk, olive oil, orange juice, orange zest and poppy seeds in the base of a microwave-safe mug.
Stir in the sugar, flour, bicarb and a pinch of salt until smooth. Microwave on high for 1½–2 minutes or until cooked through.
Allow to cool for 2 minutes before topping with a dollop of yoghurt and a spoonful of marmalade.
Mug cake magic
Extra virgin olive oil adds depth of flavour to this mug cake; if you prefer a less strong flavour you can swap for light olive oil. Microwaves vary in strength; if the cake needs a little longer, cook in 15-second bursts. The pinch of bicarb really helps with the rise.
