Our limoncello tiramisu with passionfruit curd is inspired by the flavours of Italy, blending luscious mascarpone with zingy limoncello and a sweet and tangy passionfruit curd.

Whisk eggs, sugar and vanilla in a large heatproof bowl until combined. Place bowl over a saucepan of simmering water (base of bowl should not touch water); whisk for 10 minutes or until mixture is thick enough to coat the back of a spoon (it should triple in volume). Remove from heat; cool slightly.
Whisk mascarpone and cream in a large bowl with an electric mixer until stiff peaks form. Fold mascarpone mixture through egg mixture.
Place limoncello and 1/3 cup (80ml) water in a small bowl. Dip half the sponge finger biscuits, one at a time, for 1-2 seconds only, into limoncello mixture. Arrange soaked biscuits, in a single layer, in a 22cm x 35cm, 4-litre (16-cup) dish.
Spread half the mascarpone mixture over the biscuits. Dollop the curd onto the mascarpone layer, then gently swirl it through. Repeat layering, dipping the remaining biscuits in limoncello mixture, then spreading with the remaining mascarpone mixture. Cover; refrigerate limoncello tiramisu overnight.
Just before serving, top limoncello tiramisu with coconut.

Yes! In fact, this limoncello tiramisu must be prepared the day before you plan on serving the dessert, as overnight refrigeration is required.

Limoncello is an Italian lemon-flavoured liqueur. Citrus is grown in abundance along the vertiginous Amalfi coast, especially lemons, where the rind of the sfusato lemon is steeped in alcohol and mixed with sugar syrup to produce the liqueur limoncello.
