Method
1.Preheat oven to 220°C.
2.Combine chicken, corn, cheese, cream and onion in a large bowl; season. Spoon mixture into four oiled 1-cup (250ml) ovenproof dishes; sprinkle with breadcrumbs.
3.Place dishes on an oven tray; bake for 20 minutes or until mixture is heated through and the top is browned lightly. Serve sprinkled with extra green onion, if you like.
Serve with a mixed green salad. You will need a large barbecued chicken to get the amount of shredded chicken required for this recipe.
