Preheat a 7-litre air fryer to 180°C for 3 minutes.
Place ¼ cup (35g) raspberries and half the sugar in a medium bowl. Crush the raspberries using a fork. Add cream cheese and lemon rind; mix well to combine.
Whisk eggs, milk, vanilla paste and remaining sugar in a wide bowl. Split each crumpet into halves. Spread the raspberry cream cheese evenly over the flat side of six crumpet halves. Top with remaining crumpet halves, flat-side down. Working with two filled crumpets at a time, soak in egg mixture for 15 seconds each side. Transfer to a plate.
Taking care, line the air fryer basket with baking paper. Place filled crumpets in the basket and drizzle with melted butter; at 180°C, cook for 15 minutes or until crumpets are golden.
Serve French toast crumpets topped with remaining raspberries and drizzled with honey.
