Method
1.In a medium bowl, combine couscous and the water; stand about 15 minutes or until the water is absorbed.
2.Meanwhile, boil, steam or microwave pumpkin until tender; drain.
3.In a large frying pan, heat oil; cook onion and garlic, stirring over medium heat about 3 minutes or until tender and browned lightly.
4.Add rind, juice, apricot, couscous and pumpkin; stir until heated through. Serve sprinkled with nuts and mint.
Substitute roasted pumpkin for boiled pumpkin, if preferred.
