Method

1.Combine lamb, onion, garlic, spices, herbs and egg in a large bowl. Divide mixture into 18 even-sized pieces; mould around skewers to form sausage shapes.
2.Cook kofta, in batches, on a heated oiled grill plate (or grill or barbecue) until cooked through.
3.Serve kofta with pita, tzatziki and chutney.

If using bamboo skewers, soak in water for at least 30 minutes to prevent them scorching during cooking, or cover the ends with foil. For a simple tzatziki sauce, combine ¾ cup low-fat yoghurt, 1 clove crushed garlic and 1 tablespoon finely chopped fresh flat-leaf parsley in a small bowl. For a simple chilli tomato sauce, combine ¼ cup tomato sauce (ketchup) and ¼ cup chilli sauce in a small bowl.
