Method
1.Stir sugar, juice and the water in small saucepan over low heat, without boiling, until sugar dissolves; bring to a boil. Boil, uncovered, without stirring, about 10 minutes or until mixture turns a caramel colour.
2.Remove from heat; stir in remaining ingredients (the caramel will splutter and harden at this stage). Return sauce to low heat, stirring, to dissolve any hardened caramel. Cool 10 minutes; strain into small jug.
You can substitute white wine, Grand Marnier or brandy for the red wine.
