Method
1.Boil, steam or microwave parsnip and potato until tender; drain. Mash parsnip and potato with butter and warm milk in a large bowl until smooth. Season to taste; cover to keep warm.
2.Heat oil in a large frying pan over medium heat; cook sausages, turning, about 10 minutes or until cooked through.
3.Meanwhile, make sage and onion gravy.
4.Drizzle sausages with sage and onion gravy; serve with parsnip mash and rocket.

5.Heat oil in a medium saucepan over medium-high heat; cook garlic and caramelised onion for 1 minute or until fragrant. Add flour; cook, stirring, for 1 minute. Gradually add stock, then sage leaves and cider; simmer, uncovered, about 10 minutes or until gravy is thickened slightly. Season to taste.
