1.Preheat oven to 220C (200C fan forced). Cut the slices of prosciutto in half lengthwise and wrap each around a piece of gnocchi. Skewer gnocchi onto 12 small skewers alternating with the olives.
2.Place on a large baking tray lined with non-stick baking paper. Combine oil, lemon rind and paprika together. Season with salt and freshly ground pepper. Brush the gnocchi with some of the paprika oil mixture. Bake for 10 minutes, or until golden.
3.Place mayonnaise in small serving dish; swirl the remaining paprika oil through the mayonnaise. Serve skewers with mayonnaise mixture and lemon wedges.
