1.Combine couscous with the water in large heatproof bowl, cover, stand about 5 minutes or until liquid is absorbed, fluffing with fork occasionally.
2.Tom make dressing, combine juice, oil and cumin in screw-top jar, shake well.
3.Add cumin dressing, dates, nuts and mint to couscous, mix gently.
4.Heat oiled large frying pan, cook cheese until browned both sides. Serve salad topped with cheese.
